Fruit Cake
Ingredients:
- vanilla essences some drops
- 1 lb. raisins
- 1 lb. currants
- 2 eggs
- 1/2 c. butter
- 1 c. sugar
- 1/2 c. corn syrup
- 1/2 tsp. mace
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. baking soda
- 2 3/4 c. flour, stir with fork before measuring
- 1/2 c. strong coffee
Preparation:
Preheat oven to 250 degrees. Use pan which should be 10 inches in diameter. Grease it well with vegetable oil.
Cut dates and nuts into small pieces, add raisins and currants. Mix in small bowl. Add 1/2 cup flour to fruit, mix and set aside.
Separate eggs, beat whites until stiff but not dry; set aside. Cream butter and sugar; add yolks one at a time and mix well. Add corn syrup.
Mix spices and baking soda with remaining flour and add to cream mixture by alternating with coffee. Add fruit; mix well. Then spread in greased pan. Bake until top is firm (about 4 hours). Let cool before removing from pan. Store in air-tight container.
May soak cake with brandy before storing to give a festive flair!

Pineapple Cake
Ingredients:
- Flour 1 cup
- Eggs 3
- Ground sugar 1 cup
- Baking powder 1 tsp
- Milk 1 tbsp
- Melted butter 1 tbsp
- vanilla essence essence 1 tsp
Icing:
- Fresh cream – 1 packet
- Ground sugar – ¼ cup
- Pineapple – 1 small tin
Preparation:
Take a bowl and add
egg whites and 3 tsp of sugar and beat until white foam appears. On the
other hand take another bowl and add egg yolks and remaining sugar, beat
until sugar dissolves.
Then add milk, essence and beat well. Strain
flour and baking powder and add in egg yolks mixture along with butter
and egg whites, fold with spatula. Bake in preheated oven on 200 degrees
for 15 minutes. When it’s done, let it cool down, cut in two layers and
now apply pineapple juice on both layers of cake.
For Icing:
Beat cream and sugar until stiff.
Cut pineapple in small chunks and mix in whipped cream.
Apply
cream and pineapple mixture on 1st layers then place 2nd layer of cake.
Then apply cream all over the cake and decorate it. Really yummy
pineapple fresh cream cake is ready to serve.
Chocolate Cake
Ingredients:
- Butter 125g
- Coco powder ¾ cup
- Sugar 1 cup
- Eggs 2
- Milk 1 cup
- Baking powder 1 tsp
- Vanilla essence 1 tsp
- Flour 1,1/3 cup
Preparation of sponge:
In a greased cake pan of 9 inch, sprinkle coco powder in the base of pan. Now take a bowl and beat eggs, add vanilla essence as well. Now mix flour, baking powder, sugar and coco powder. Then add flour mixture, milk and butter in egg bowl and mix it well. Now pour this mixture in cake pan and bake in preheated oven on 180ºC or 350ºF and Gas Mark 4 for 25 to 30 minutes. When the cake is done, let it cool down then cut in 2 portions and decorate with icing.
Icing Ingredients:
- Fresh cream 500g
- Sugar to taste
- Coco powder 4 tbsp
Icing preparation:
Take a bowl,beat cream and sugar togather until it becomes like white foam. Than add coco powder and apply on cake, inside and outside. Now yummy and delicious chocolate cake is ready to serve.
Vanilla biscuits:
Ingredients:
- Flour 165 gm
- icing sugar 64 gm
- salt 1 pinch
- egg 1
- butter 120 gm
- vanilla essence some drops
